What's for dinner?

I know it's early, but I'm really organized today. You will think I'm the pasta queen (which I am) but tonight we are having:

Cheese tortellini sauteed with fresh garlic, spinach, onions, mushrooms and roasted red peppers. Garlic bread on the side.

Pico de gallo with cabbage on the side. Mr gut loves leftovers of these enchiladas for breakfast with a fried egg.

I'm going to just saute the Kofta loose in a pan rather than try to make mini patties or meatballs with it.

All served with warm pita.

I'm loving this way too much. Only 4-6 more weeks and then I'm on my own again.
