(15,774 posts)There is a fantastic Greek Mom and Pop shop (like Dairy Queen) on the way that makes a great grilled cheese sandwich (thick layer of melted cheese between two slabs of Texas Toast). They even throw in some pickles between the cheese for me.
It is the only place I stop in to eat when I am on this side of town. They don't serve tomato soup, mores the pity, but they have great Gyros, Sluvokias, Shish Kabobs, etc-right in the middle of a Hispanic area. The owner use to be a firefighter and hires young Hispanics and gives them a good wage so he has a loyal customer base.

(15,774 posts)Grandpa and Grandma got commodity cheese. It tasted great, not like the yellow bricks they give today. We would have grill cheese sandwiches as a snack at night. Sometimes I would put a pickle or tomatoes if they were in season (catsup if they weren't) in the center.

(28,394 posts)And a nice textured white bread, like Pepperidge Farm (not that cheap squishy kind!).
Yes, I use butter on each piece of bread for the nicest browning. You could use a light margarine spread for less calories, but it won't toast as well as butter.
I cook it on med-low. Have to watch it so it doesn't burn!

I have a new obsession, Grilled cheese sandwich on white bread with cheddar cheese and slices of pear inside. For best results, use mayo on outside of bread instead of margarine or butter.
