Music Appreciation

I am not without some musical training. 16+ years piano student plus many many years just playing. Also singing but I'm not the best soloist mostly because I have a lot of allergies and I'm inconsistent.
I love lots of music. It's hard for me to put it into categories. I used to love Gospel. But I have been watching a special on Netflix with a Gospel choir and I can barely hear any melody. What I hear is vocal exercises. People getting so fancy running up and down the scale that they are missing the actual song.
I remember hearing (I think) Gwen Stefani doing this once when she was paying tribute to someone like Etta James. It didn't sound anything like Etta or whoever she was paying tribute to.
Does this drive anyone else crazy? I could listen to Jay and the Americans, The Beatles, Classical; Opera, I'll even admit to liking some country but please just get to the point!
