Maybe Once combines two different melodies at the same time; a technique known as counterpoint.
Examples of counterpoint can be heard in "For No One" by The Beatles between a French horn and Paul McCartney's vocals. Another example in the musical The Music Man with the song Pick-a-little / Goodnight Ladies.
