But didn't we fight for independence from Mexico because we wanted to continue to enslave people, while Mexico was against slavery?

Another explanation is that the colonists in Texas did not want to live under Santa Anna's dictatorship. It really depends upon which history book you want to read.

Issues such as racism and religion were also reasons why the colonists desired independence. Prior to independence all government documents had to be executed in Spanish. Both Anglos and Mexicans felt superior to the other group. The colonists were also required to become members of the Roman Catholic church. So yes, slavery was an issue, but there were a lot of other issues too.
