Why big chains thrived while small restaurants died

Thousands of restaurants closed. Millions of workers lost jobs. Line cooks had a higher risk of death from Covid than health care workers.

Those outcomes weren't fate. They were policy choices.

They are well managed, popular and supportive of the community. Being smaller operators, they were able to pivot quickly in March of 2020, shifting to takeout service. They have since reopened for indoor dining as well. The local breakfast/lunch place has added staff and is always crowded. The fine dining lunch/dinner spot strongly suggests you make your reservations online and check in before leaving home as they are running full tilt. The nearby Dennys will be torn down for a car wash to be built, the 54th Street Grill is to become a new Chase Bank branch.

We rarely visit the chain restaurants around here as the local ones offer much better value in our opinion.
