I have never considered making my own sauerkraut, but it makes sense. I thought it would be hard to do, but apparently, it isn't.

I found this recipe for making it in a mason jar, so you don't have to make a huge quantity if you don't want that much. Is this how you did it?

The deal with home made is that it isn't pasteurized like that you buy at the store. There are a ton of natural probiotics that are removed when processed. I read somewhere that you get way more than you would in the pills.

I happened across a great 2 gallon, wide mouth jar at a yard sale and thought I'd try to make a bunch using two heads. Ended up with 8 pint jars. Two days and half a pint is gone. The more I eat the better it taste.

Also vitamine C. Sailors use to make it for long trips so they wouldn't get scurvy.

Give it a try. Just squeeze it real good with your hands to get it nice and juicy.
