What's for Dinner, Sun., Jan. 24, 2021

Tacos. The RG made up a plate of three tacos each with seasoned ground pork in them. The shells were soft, but toasted in the oven.

Then there was a plate of items to put on top, some I'd never had. Chile chiltepepin laroca, for example. They were pepper buds and not hot. Another item that was interesting was small limes that were heated. They had a pinhole in them which enabled squirting lime juice directly on the taco. Then, of course, the standards: chopped cilantro, tomato, pepper strips, red onion, grated cheese.

Pineapple peach kombucha.

For dessert, Maria cookies with hard brandy butter. Hot orange tea.

I spent last week in the hospital and will be doing a liquid diet for another several days. So, chicken broth with Jell-o for dessert will be tonight's dinner.
I'm enjoying the mental picture that your lovely meal conveys and hoping it won't be long until I'm enjoying something similar.

and broth are SO GOOD when you are eating them in your own home. Glad you are back there. We had pork roast, mashed potatoes/gravy, corn and homemade eclairs for dessert.

I made fajitas,steak and chicken, topped with a whole lot of sautéed red and green bell peppers and red onion.

Taco rice, refried beans, plus shredded cheddar cheese, sour cream, chopped jalapeños, and salsa. Cold beer. Frosted brownies and coffee.

Cher, I could have used your little limes!

I used a seasoning mix from Budget Bytes for almost everything. It includes chili powder, onion powder, cumin,cayenne, smoked paprika, sugar, and cornstarch.

I found an old steak in the freezer that need using. The soup is close to what I'd call stew.

Some buttered rye bread to go with.

FLFC enjoyed the trimmings from the steak which were cooked separately.

White sweet potatoes and squash ready to boil and mash - onion gravy
Sweet and sour red cabbage w/bacon garnish for the other veggie side.

Banana split ice cream for dessert.

This is Japanese fried chicken nuggets. The chicken is marinated in say, ginger, and garlic, then dredged in potato starch and fried. Lots of flavor from the marinade and a nice crispy coating.
