We finally get to see my turning 93 year old mother-in-law for her birthday on March 15! Rescheduled from last year!
I have a great carrot cake recipe that I love to make with our wintered-over carrots. They are uncommonly sweet. We have a good crop, and I want to make her my delicious carrot cake! But she can't eat eggs anymore, including in baked goods. It takes 4.
Thought I'd check with hive mind here - I'll bet there are some excellent ideas!

Most Commonly Used Egg Substitutes for Baking
Mashed Banana.
Applesauce.
Silken Tofu.
Ground Flax Seed mixed with water.
Yogurt (dairy-free or regular)
Buttermilk.
Sweetened Condensed Milk.

(5,850 posts)I used it to make cupcakes for a class party and nobody could tell the difference.
One mother had pitched a fit about my intention of making egg-free cupcakes for the first grade class. She insisted on baking and bringing in normal cupcakes, even though that meant my daughter couldn't have one.
I said my daughter would be singled out and unable to have a cupcake, so please let me bring in eggless cupcakes. I made them anyway so the kids could have one of each, and my daughter could have 2 eggless ones.
They came out fine, and afterward the mother apologized to me. Normally I wouldn't make an issue of this, but I didn't want my child sitting out the party while everyone else had cupcakes.

Apparently it has to be garbanzo beans. The liquid will be thick, and will act as a binder when it is cooked. Definitely something you want to google to get exact details.
I'm all about the eggs myself

I also use:
flax egg
vegan egg
Bob's Red Mill egg replacement
egg replacer (someone else showed the brand)
Just Egg (which is not egg at all, lol)
I got different results through trial and error but now I can figure which to use when. For example, I don't want applesauce in my cornbread.

I've use GFM in recipes that didn't need to be particularly fluffy, with no problems. I'd suggest aquafaba for the fluffy stuff:

(111,329 posts)If it's the cholesterol, then a good sub would be egg white and extra oil.
If it's allergy, Le Google is your friend. I found dozens of eggless carrot cake recipes very quickly.

(111,329 posts)The recipe at Le Google I liked the best used grated apples (for the pectin) with the grated carrots.
Once you get the chemistry somewhere else, use your own spices and frosting.
That's why I suggested Le Google. That's where you find tested recipes for the cake so you don't lose time and money experimenting with sbstitutions that can throw baking chemistry off.
