What's for Dinner, Wed., May 5, 2021

Chinese dumplings--chicken with vegetable.

I've chopped up scallions and cilantro to put over the top. Both soy/wasabi and hoisin for dipping.

Also made a tossed green salad with lots of garden goodies such as baby arugula, radish and beet leaves, and chives with their purple flower attached.

2. Chicken pot pie

It's a cold, damp and rainy day in the Catskills so we need comfort food.

We made a simple chicken pot pie with diced chicken, celery, onion, carrots, peas and small cubes of potato. The sauce is made from milk, chicken broth and flour. It all goes into the homemade crusts (we made 2 pies) that are covered with a top crust. The warm oven helps warm up the house!

At dinnertime, I'll make a green salad to go along with the pie.

For dessert, in honor of Cinco de Mayo, we'll have a shot of tequila!

Wild caught salmon poached in white wine, garlic, and herbs
Buttercrunch lettuce salad with grape tomatoes, red onion, and grated carrot
Hard rolls

Skinny Cow ice cream sandwiches for the guys

and believe it or not we did not do that on purpose. We just have ground beef left over from yesterday's burgers.

We'll eat the last of the oatmeal/peanut butter cookies for dessert

This one is dedicated to the soggy bottom boys. I neglected to fry up the ham first and the result was tasty but the bottom was afloat in whatever liquid hams are injected with. No one complained. I guess they were hungry.

15. Chicken and pasta

Did bone in thighs in the air fryer, liberally coated with Italian seasoning, garlic powder, salt, pepper, and some cayenne.

For the pasta sauce: butter, onions simmered till soft, then a spoon of flour, then white wine and milk. Added diced fresh tomato, and sautéed some spinach and garlic in a side pan, which then got dumped in the sauce. When the chicken was done, I poured the drippings into the sauce. Yum!

I’m out of parmesan and didn’t realize it until I went to grab it to put in the sauce. It’s still pretty darn tasty without the cheese!

ETA: Dessert is strawberry muffins I made last night. Well, it’s more of a coffee cake thing made with my favorite muffin recipe. I must have lost my silicone muffin cups when I moved. So, I dumped the batter in a small pyrex pan and added more baking time. And more baking time. And a little more baking time, lol!
