What's for Dinner, Sat., May 22, 2021

Pasta with tarragon butter and walnut sauce. I warmed up some turkey meatballs and added them to the tossed pasta and sauce. Tarragon is from my herb garden.

Tarragon and turkey are a good combo. I looked it up in my Flavor Bible.

Tart cherry kombucha to drink.

Strawberry mochis for dessert.

1. panade

On yesterday's thread, soothsayer mentioned using a panade when she made pork meatballs. Didn't know that term so I had to look it up. My meatballs for tonight's meal were made using a panade.

Turns out there are all kinds of panades, but there is an important purpose for using them when making meatloaf or meatballs, whether it be chicken, turkey, pork or beef.

I listed different types of panades on the post. If you didn't see it, you might find it helpful in the future.

So maybe cold cuts instead. Or... I might pound the heck out of some pork chops and bread ‘em and fry ‘em up.

mixed with 2% milk.

However, I think it could have been better had I used a Brioche roll.

My Brioche rolls are all fresh, though, and as the articles on panade point out, one advantage of panades is to use up day-old bread.

I am definitely going to be exploring panades more. When I googled it, I found so many interesting recipes!

4. Bean soup and salad

Bean Soup: I noted the ham stock and ham from April in the freezer and decided to use it. I've got kidney beans, ham, ham stock and the usual veggies simmering on the stove now.

Salad is baby spinach with garden vegetables. I'll use a store bought vinaigrette on it.

Some leftover garlic bread to round out the meal.

Fruit for dessert - watermelon, grapes, cherries, mandarin orange, banana and/or apple - I'll decide when I get to it. ETA, Strawberries too.

FLFC expressed his hunger earlier today. He is not on any eating and sleeping schedule that I can ascertain. He had some of the ham I was putting in the soup, a meatball, salami and some watermelon. He was not interested in anything he usually eats other than a few licks of peanut butter.
