What's for Dinner, Sat., Aug. 14, 2021

This is a totally cold dinner because it is so hot I wouldn't think of turning on an oven.

Cold stuffed vegetable plate. There are stuffed peppers, cucumber, and zucchini.

I made the various stuffings over the past day or two. There is one vegetable stuffing (tomatoes, onion, pepper) with couscous. These vegetables are topped with grated parmesan. There is cream cheese stuffing, which goes in the cucumber, which I rounded out so it's a complete circle and then stuffed with the cream cheese. It has chopped cashews on top of it.

Cold chicken breast, cut into sections, and which had been marinated in Italian seasonings.

For dessert, lemon Greek yogurt with a handful of trail mix.

Pineapple peach kombucha to drink.

Later on I will undoubtedly have some watermelon.

2. Made Tacos

I lightly fried soft corn tortillas.
Ground beef with cumin, paprika, powdered cayenne, a little sriracha sauce, a few drops of liquid smoke, diced onions, tomatoes, jalapeño, cilantro, and garlic.
Added 2 ounces of tequila, the juice of a lime, & sugar offset the heat & acid.
We're getting really good garden tomatoes right now so we're looking for things to use raw tomato.
We did club sandwiches last night.
I saved some diced onion & jalapeño to put on the tacos themselves.
I didn't feel like making sides, though.

Hamburgers and hot dogs and stuff. So won't be terribly. hungry tonight. We're having BLTs again, while we still can.

INGREDIENTS
1 medium spaghetti squash - $2.99
1/2 small purple cabbage - $1.29
1 large bell pepper - $1.29
1/4 cup shredded carrots - $0.38
3 tbsp chopped green onion - $0.32

CREAMY ASIAN SAUCE
1/4 cup tahini - $0.82
1/4 cup coconut aminos - $0.70
1 medium lime, juiced - $0.33
1 tbsp Chili Garlic Sauce - $0.11
1/2 tbsp sesame oil - $0.15
1/2 tsp salt - $0.03
1/2 tsp garlic powder - $0.05


INSTRUCTIONS
Make the spaghetti squash in the microwave or in the instant pot. Use the instructions in this post
Chop the vegetables while the spaghetti squash is cooking
Make the Creamy Asian Sauce by combining all the ingredients in a small bowl and combining with a fork until smooth
Once the spaghetti squash is done cooking, carefully use a fork to scrape the flesh into spaghetti like strands. Add the spaghetti squash to a large bowl.
Add the rest of the ingredients to the bowl and stir well (while spaghetti squash is still hot). Let sit 3-4 minutes to lightly cook the other veggies added.
Serve hot or cold.

I stayed and ate w/ him as Sis was headed out to see Jimmy Buffet tonight (outdoor concert).

Your menus are remarkable.

We had a large Caesar salad with anchovies. The Landlady(!) made a spectacular minestrone soup and we followed that with a delicious platter of spaghetti marinara. Apples for dessert.

We’re sailing tomorrow so we’re planning several days of meals.
