What's for Dinner, Thurs., Aug. 26, 2021

Since noon I have been working on cooking up the many fresh vegetables from my garden. This should be ready for dinner: Soup au Pistou using a recipe from Taste of Home's summer cookbook. I added/changed some items, though. No canned beans--I used fresh lupinis and green beans. Carrots, onion, celery, cherry tomatoes, garlic, orecchiette, and at the end, I put in sliced zucchini.

The pistou is pretty much just basil pesto without the walnuts. A tablespoon of that goes in the soup after it's poured from the bowl.

I cooked garlic-herb pork sausage from WF in the slow cooker and then cut it into bits. I will add some of that in some situations.

Dessert: cherries.

Wanted to report back on my Brussels sprouts that I cooked in the air fryer. They turned out really well. Nice and crispy on the outside and soft on the inside. Various dips or sauces are needed, though, because they get a little boring without that. I used my tahini sauce but wished I'd made a few others.

Tabouli, cucumber salad (w/ rice wine vinegar, celery seed, onions, cherry tomatoes) , Cedar's Tzatziki, Ithaca classic humus, and Amnon's falafel ( prepared in air fryer, sublime).Keep cool!

It took longer than I expected so I stopped off at Jersey Mikes's and got giant subs for tonight and will use the leftover subs for tomorrow's lunch.

We’re sailboat cruising in Long Island Sound and tonight we’re anchored off of Glen Cove watching the sun slowly sinking and sipping white wine.

Broiled sirloin with fried onions, mushrooms and garlic. Mashed potatoes with a light brown gravy. The steamed broccoli is the last of our fresh veggies so it’s time to go ashore for provisions.

Tea with lemon and cookies for dessert.

Tomorrow we’re heading to Port Jefferson.

Bucatini in a pesto cream sauce. Sautéed almond green beans from my garden.

*brussels sprouts in the air fryer! Why didn’t I think of that?

Dump a can of anchovies into a small frypan on med-low.
Splash in a couple of glugs of dry white wine.
Stir.
The anchovies will melt.
