What's for Dinner, Wed., Sept. 1, 2021

Posting early due to working late.

Tofu kebabs. Other veggies are sliced onion, peppers, and tomatoes. I first sauteed the tofu and then marinated it in my maple-chile glaze.

Sliced cucumbers in sour cream with red onions and mint.

Hah, the mint is getting so aggressive it is growing up between the boards of the floor in the greenhouse. I was so happy I could cut it in there instead of in the rain!

side by side on the grill with creamer potatoes in a red miso sauce. Big green salads with cukes, carrots, peppers all from my garden.

big yard that mint should be confined to a pot. We have it growing in a large washtub so it doesn't spread.

But there are language barriers at the community garden and some people didn’t get the message.

Next year the incoming gardener can dig it up.

It's all raised beds there, too. It's been somewhat kept in check due to my aggressive cutting of it for tea.

with some extra pepper & oregano, minced garlic, sliced mushrooms, corn, and diced potato.

I generally keep a large can of Cap'n Freds Chopped Ocean Clams in the pantry, and some bottled clam juice. It comes out just as good using that when the store doesn't have fresh clams.

up on all spices since the move back to the Bedford house, I had no cumin. I can't imagine taco seasoning without cumin. Thus, I used the chili and mixed it with the turkey...hubs loved it. He wants that from now on. We had hard taco shells, lettuce, tomato, pineapple, onion, and freshly grated cheese. I get lactose-free cheese from Sams. We topped off the tacos with homemade Greek Yogurt (also lactose-free). Diet Pepsi was the beverage of choice.

Regular beef burgers, (one each) and grilled portobello (the big ones).
Both seasoned with salt, pepper, garlic & Worcestershire.
Made onions & mushrooms, sauteed with red wine, garlic, sriracha, lime juice, sugar, cinnamon, salt, cayenne, & paprika.
Toasted the buns until barely grill marked.
Perfect day for grilling on the deck. 74° & sunny.

The First Mate returned from a shore excursion to tell me she didn’t like my menu. She said she was divinely inspired to make chicken cacciatore with spaghetti. Okay. I’ll still make a mixed salad.

Herb Baked Flounder
Some frozen mixed veggies from the jolly one. Potatoes, green beans, peppers and ?
Some hush puppies.

FLFC sniffed the fish three times before he gave it four paws down. He got by on some steak-umm, turkey, watermelon and assorted treats.

I had sent my weeknight chef a similar recipe, which he sniffed at, but we all liked this, which was similar. I put some leftover green beans in mine to up the vegetable content.
