I'm thinking of making granola

Hard to believe, but I’ve never made granola before. Not even when I belonged to a hippy food coop in the 70s. Looking over recipes online, it looks like I just add something tasty like coconut to rolled oats, coat with something sweet and syrupy with maybe some added oil, then bake at a low temperature for a long time, stirring now and then. So I should be fine just improvising, right?

I used to have a GF baking business and I sold really delicious granola that wasn't very sweet. Small amount of maple syrup added to lots of good grains. No oil.

just make it up as you go.

So oats and sticky stuff and added stuff for variety. That's about it.

I’m making granola mainly to use up some shredded coconut I picked up at the Mennonite bulk store. I don’t know what I was thinking when I bought it, but now I’m thinking that coconut plus oats plus a a bit of other stuff equals something tasty to sprinkle on my yogurt.

2 cups oats, I like whole oats but my husband likes quick oats.
1/2 cup almond slivers
1/2 cup cashew pieces
1/2 cup sunflower seeds or pumpkin seeds
1/2 cup wheat germ
1/2 teaspoon salt

Mix all of this in a big bowl. In a small bowl mix:

1/4 cup oil - I use safflower
1/3 cup maple syrup
1 teaspoon vanilla

Pour this over the oat/nut mix & stir until all the dry ingreds are slightly moist. Spread the mixture evenly on a cookie sheet and bake at 325° for about 30 minutes, pulling out to stir every 10 minutes.

This is an easy recipe to modify for what you have on hand. Use what nuts/seeds you like. I've used agave instead of maple syrup & it works fine. If you want cinnamon add it to the oat mixture. If you want granola that lumps together so you get small rock sized chunks of granola, this recipe doesn't do that. I looked online & it seems that most recipes use egg to get that effect, so I'm happy with loose granola.

Someday I'm going to make a pistachio/dark chocolate granola. Maybe for Christmas. Yum!

I'm not killing orangutans for breakfast.

My recipe is like the one above but 2 T olive oil and 1 T honey with my 2 cups of whole oats, 1/2 c whatever nuts i want, 1/2 c seeds of some kind, and 1 c dried fruit. Sometimes I add cinnamon or allspice or use maple syrup instead of honey. You can play around and make your own recipe.

Peanut butter granola is good too: drop the fruit, oil and honey and add 1/3 to 1/2 c peanut butter. Sprinkle with chocolate chips if you want.

nuts: walnuts, pecans, ground almonds
sunflower seeds, pepitas
coconut
flaxseed
oil or butter
maple syrup or coconut sugar
cinnamon, salt
raisins or cranberries or dried blueberries

Just add some milk and zap it for a few seconds and you've got instant breakfast!
