Peanut chicken satay. I made this a week or two ago on the grill; this time I decided to try the air fryer.
I'm satisfied with the air fryer. It wasn't quite as good as the grill, but very close. Plus the cleanup is easier, there are no mosquito bites, and I got the same golden browns I would have gotten from the grill. Along with the chicken breast that had been marinated in the peanut sauce was onion and sweet peppers. They all had a nice golden cast to them, too.
Dessert: watermelon.

(71,143 posts)at 350 after pouring the marinade over the chicken, made my husband rolls and served it on a giant salad that included every fresh vegetable I could find, crisp Ohio lettuce, and homemade blue-cheese dressing...it really was quite good. And for dessert...watermelon because we ate the leftover apple crisp for breakfast! Happy labor day all.

I grilled some London broil with a spice rub, also two fillets of salmon. I sliced the steak into thin pieces and the guys had it with peppers and onions on steak rolls.
Baked beans, cucumbers in sour cream, and cuke-tomato-onion salad. Cukes and tomatoes from the garden. Chocolate ice cream and oatmeal raspberry bars for dessert.

leftover cake too
which I cooked in the Instant Pot, then crisp by broiling in the oven. Homemade potato salad, sliced tomatoes, and plum cake for dessert.

(24,402 posts)Still getting used to our only kiddo (in high school) working at the local Ace Hardware and not being home for dinner. I miss cooking for 3 of us! That said
our board was lovely
it included a triple cream blue cheese, a mustard/pear jam, a Sauvignon blanc hard cheese, creme fraiche with chives, pecan crackers and rosemary Parmesan crackers, smoked salmon, shrimp cocktail and various pickles and sliced garden veggies. Watermelon for dessert.
It was a very nice evening and I still miss my kid.
