Alton Brown's kid founded that company, and yes imitation chicken is a great substitute.

I finally tasted one of the Impossible burgers at Burger King, a place I have not been in in forever it seems, I was surprised that it was pretty good but too expensive. I will be interested in the "Impossible" chicken, so far anything I have tasted has not been great as a chicken replacement.

I switched my entire family to being off red meat, at least at home, without them even noticing. At least that was something then I just stopped eating meat all together. They all went back to burgers.

In most of our chicken recipes we use the thighs, so I can't see this working.

That being said, we absolutely LOVE the Impossible Burgers! They have totally replaced ground beef for us, never to be used again. And after several taste tests, much better than Beyond Beef, which tends to leave an aftertaste.
