1. Sounds good...ham, baked beans, corn and fresh squash for me. The corn was local and delicious too.

3. Steak night

I cleaned out the freezer and found two nice little steaks already seasoned and vacuum sealed. I dropped them into the tank at 135, so all I needed to do at dinner time was to bake potatoes, nuke a vegetable, and give the steaks a quick sear.

It's a red curry. Not very spicy.

Veg is zucchini, yellow squash, orange bell pepper, onions, and mushrooms.


dessert is a coffee ice cream cone.

5. Carribean Beef Stew (a Weight Watchers recipe)

It is just a beef stew with different ingredients
Beef, onion, garlic of course.

Can of diced tomatoes

Jamacian Jerk spices

Sweet potatoes cut up ( I cut them as 2 inch squares)

fresh green beans

So you brown the meat, onion and garlic together and sprinkle with the jerk spices, add tomatoes and 2 cups of beef broth.

Let that simmer covered for an hour or so ..
then add the potatoes. Let the potatoes get about half done then add the green beans & cook til the beans are done

Serve over rice. (the recipe calls for fat free coconut milk instead of water for the rice)
