Despite my fear of getting slammed by the gourmet cooks on this site (who burned me last time when they chastised me for contributing to their site), but because this is such an easy technique (and to spite them ), let me tell about my new discovery.
I forgot my Blendtec blender ( or any serious blender) has a 'knead dough' function. I found out, All I need to do is dump in the ingredients, hit the proper function which kneads the dough briefly and all I do is just place on the lid and let the dough sit in the blender for the first rise (60-90 min).
Then, I continue with the more traditional kneading, 2nd rise and baking.
My ratio for one loaf is 200ml water::500ml flour.

I have a licensed kitchen and sell baked goods at a small stand out by the road... I use my large 8 quart Kitchen Aid Mixer... same idea... just put all ingredients in bowl and mix away... oh, I have memories of years ago kneading so many loaves by hand... never again
I use my blender (Ninja works just fine) and/or food processor to mix dough for crusts
even though I don't eat bread anymore... I have memories and know there is nothing better than fresh bread out of the oven!!

(16,949 posts)She mixes it up, lets it rise and bakes it covered in a 400 d. oven. She is still working full-time, so finding a no-knead technique is a big help for her. I still knead the bread I make, but I use a piece of waxed paper on the counter for quicker clean-up.
Your idea sounds like a time saver, too.
