What's for Dinner, Fri., Sept. 17, 2021

Making an eggplant dish tonight called "Grilled Eggplant Roll-Ups With Spinach and Goat Cheese," which I found in a Washington Post recipes newsletter.

It will probably take me a while because I'm making my own fresh tomato sauce. I'm using spinach from my garden, but I wasn't able to grow a sizable enough eggplant yet for a dish like this. I bought the eggplant at a farmer's market, though, so it's super-fresh. I think it will be great with the goat cheese.

Dessert: chocolate chip waffle with coffee ice cream and hazelnuts on top.

My husband is away fishing and my kiddo is going to a football game so I'm on my own. I bought some beautiful chanterelle and lobster mushrooms at the farmer's market that will be perfect for this. Green salad on the side.

Rationing whole wheat flour. None at the store this week. Hope it's temporary, unlike April 2020.

marinated the chicken for several hours. I sauteed it with olive oil and used the marinate, and additional leftover marinade, added some brown sugar, fresh garlic after it was browned added a can of coconut milk and a 1/4 cup of half and half as the coconut milk was low fat. I also added some salt and pepper to taste. I served it with rice and salad with a homemade vinaigrette. Hubs liked it so much he wants it again tomorrow.
