What's for Dinner, Thurs., Sept. 23, 2021

Egglant roll-ups filled with spinach and goat cheese.

I tried to make this the other night, but had to abandon my plans because the spinach wasn't up to par IMO. I had cut it from the garden late in the day and while it was "all right," it wasn't exceptional. I knew I had better leaves to choose from, so I put what I'd done away to continue it when I had better spinach.

This is a kind of spinach that's ok to grow in the summer heat, however, it does get better as the season cools off.

Last night I picked the spinach so I can finish the dish tonight.

Dessert: don't know. Will post back when I decide.

dessert: a slice of homemade chocolate cake (made yesterday)





Just checked outside to see if I could get any more tomatoes out of my garden--not likely. But...


There's eggplant out there!!! I had given up on it.

4. Braised pork chops and veggies

Pork chops (from Butcher Box) are extra thick so I sliced them horizontally and made a double batch.
Potatoes, carrots, onions, and peas, seasoned with a little rosemary and thyme. The gravy should be exceptional.
