Cooking & Baking
Related: About this forumThe weather is turning cooler and I've been in a soup making mood.
Today I made Creamy Chicken Vegetable. No recipe, just winging it. I had 3 chicken thighs and broth that I had cooked the other day and was thinking of a way to use them.
I started out by cooking onion, celery and mushrooms in butter until slightly softened. Added a little flour and cooked for a couple of minutes, then added chicken broth and stirred until it thickened slightly. Then I added a package of frozen mixed veggies and some baby red potatoes, cut in small pieces. When the veggies were tender I added some rough chopped baby spinach and let it cook for a few minutes and then stirred in a couple spoons of softened cream cheese and the chicken which I had torn into bite sized pieces. When that was all incorporated I added enough half and half to make the consistency I wanted and tasted for seasoning.
Absolutely delicious and hit the spot. Reminds me of a chicken pot pie without the crust.

BTW I use a couple of good ham hocks in it and cut the meat off them after a 3 or 4 hours @
a low temp.. I also add 1 or 2 serrano peppers (seeds removed to the onion and other stuff)
Use dried black beans (rinsed) and let 'em soak over night and then bring I simmer them for about
an hour then I add the other ingredients and the chicken stock as the water boils off.

(15,124 posts)anything. She just added ingredients until it "worked right" or "felt right" or "looked about right". And, her pie crusts, her ox tail soup, her gingerbread were always wonderful.
She's been gone over 30 years, but I still treasure memories of her.
Thanks for your "homey" post.

(6,252 posts)I make a lot of soups, but I never thought of adding cream cheese. I will sometimes add a bit of sour cream for the tang and creaminess, and cream cheese would do much the same thing, with a slightly different flavor.
Thanks for the good idea!
