What's for Dinner, Sun., Jan. 9, 2022

I'm going to finesse a couple dishes I already made:

I am adding parmesan rinds to my Spanish Bean Soup with Chorizo. I got this advice from the RG. The soup is good, but it's not GREAT. Like one he would make.

The next dish is:

Breaded Eggplant Slices topped with Broccoli Rabe & Sundried Tomatoes.

This morning I made broccoli rabe as a topping for toast. It has these ingredients:

broccoli rabe
garlic
sun-dried tomatoes
dried red pepper flakes
slivered almonds

It was fabulous. However, I wanted to use it on my breaded eggplant slices that were extra from my eggplant parmesan last night. So again, I consulted the RG as to whether this would even be good. He can taste things in his head; I can't. He said it would be very good and to add a little crema Mexicana combined with a little mayo for a topping.

Pumpkin pie. Not expecting to eat any greens today. Will see how I feel in the morning.

Does RG stand for Royal Governor? See the post but can't crack the acronym.

I hate the terms "husband" and "wife." Ugh. So old-fashioned, out of step with contemporary norms. Bleh.

Anyway, that's what I call him because he really is an expert in the culinary field.

Tossed salad, lettuce, tomato, celery, red peppers, sun dried tomato, balsamic and olive oil.

10. Steamed shrimp and spicy sausage

with steamed red potatoes, all with butter and lots of cajun seasoning. I’m a weirdo and throw some sour cream on top, too. No veggies. Oops. Will make up for it tomorrow.

Still eating candy for dessert. I also have some fudge topped with marshmallows(!), made by my boss’ sister. It’s very sweet and I’m not a big fudge person, but it is chocolate so of course I’ll nibble my way through it.
