What's for Dinner, Tues., Jan. 18, 2022

I'm making a favorite Mollie Katzen recipe tonight: cauliflower cheese pie. I've made this pie many times over the years. I like to serve it with mango chutney on the side. It has onions, thyme, basil, eggs and a little milk, and cheddar cheese.

The side accompaniment I enjoy most with this is mango chutney.

Tossed green salad with olives, carrots, red and yellow pepper, cucumbers, and tomatoes.


Dessert will be a mug of hot white chocolate.

1. It is Tuesday...so tacos of some sort is always on the Tuesday menu at our house.

Tonight I think we'll have traditional tacos...flour tortillas for the kiddo and hard shells for hubs and me. I'm going to make a secondary taco...a Poblano con queso taco...they are super easy to make and oh so cheesy. If anyone is interested in making them, I found the recipe in the video below...at the 5:05 mark.

Highly recommend.

I'm thinking of baking (my grill needs help) I'm minus lemons and dill; my teriyaki sauce is abysmal and I'm still working on a plan. An suggestions? I'm roasting carrots and making rice.

Is great on salmon.
I usually use dill too tho

Sounds weird but is a good sauce for the fish…

Slow baked chicken leg quarters with a light coating of tomato based BBQ sauce
Mac and cheese casserole
Baby spinach salad with a vinaigrette
No sugar cake with no sugar icing. TJ calls it air cake (tastes like air)
A mug of C C Fine Tea's Rose White a gift from my tea expert niece. It has very subtle flavors.

FLFC had some of the chicken and a pile of Temptations in his bed.

I have some leftover lemon chicken pieces (courtesy of a NYT recipe last weekend), some snowpeas, rice, and onions. The cauliflower cheese pie sounds good, though - maybe later.

I made them a meat pie (tortiere) and some sauteed yellow squash on the side.

chocolate chip cookies for dessert



(They invited me to join them, so I did!)
