What's for Dinner, Thurs., Jan. 20, 2022

Salmon stuffed with shrimp.

Cucumber & onion salad in sour cream/buttermilk/mascarpone dressing. Scallions and chopped marjoram (yep, out of my garden!)

Zucchini fritters made with my spiralizer. They also have ricotta in them.

Dessert: small serving of pineapple mango HD. Decaf and a vanilla biscotti.

1. Pork cutlets with a lemon caper sauce.

I love capers but my kiddo hates them, so I make any recipes with capers when he's not going to be home. I'll serve the cutlets on a bed of jasmine rice with a side of almond green beans.

2. Leftover pasta.

The last night of rigatoni with my homemade tomato sauce with Italian sausage. It's really good, but this is the fourth night.

Normally grocery shop either Wednesday or Thursday, but when I ordered groceries on Tuesday, was unable to get a grocery pick slot until Saturday, so having to stretch things out a bit longer.

Time to move on to something else tomorrow.

ETA: still need to figure out something sweet for the chocoholic husband.

ETA2: Husband is rebelling against leftover pasta. Hamburgers it is, then!

Do you bake at 350º? Also, is the stuffing just shrimp or do you use bread crumbs or anything? TIA

We're ordering in tonight from our favorite Upper East Side Indian restaurant, Mughlai. My mouth is watering just thinking of it.

Not sure what we'll order but I know it will be delicious and fiery for a cold January night.

Turkey breast, shredded Mozzarella cheese, chopped sweet onion, strips of red radish, a big helping of fresh sprouts (started them Sun) and a bit of creamy Italian dressing. Radishes on the side.

served w/ spaghetti and homemade sauce

made it for dad and sis, and they invited me to stay.

dessert was the chocolate chip cookies from the other day.

with onions, capers and rye bread. The livers have been soaking in buttermilk for several house (it removes some of the organ-y tang). A green salad as a side.
