There's been freezing rain coming down hard and fast the last couple of hours, and 5-9" of snow expected by morning. So, I made a hot and hearty slow cooker pot of soup and some homemade wheat bread.
(I got lazy with my bread. I didn't feel like reshaping it after proofing in the microwave and just hoped it would rise enough from the steam from spritzing it in the dutch oven. It didn't, and I knew better, but still soft and delicious with a crisp crust. Husband was staaaaarving, so I also had to cut it before it was cooled.)
I kind of winged this, so this is kind of the recipe:
Ingredients:
3 medium and 4 small yukon gold, and 4 small russets (all the potatoes in the house) cut into approx. 1/2" cubes
1 large head of broccoli and stems, chopped
3 largish carrots, chopped
half of a large onion, chopped
1 qt. chicken broth made from base, plus about 8 oz. of addl. water
3 t. minced garlic
1/4 cup of butter
salt, pepper, dried dill, celery seed, a wee pinch of dried thyme
1 cup heavy cream
2 T. cornstarch slurry
8 oz. shredded extra sharp cheddar cheese
Directions:
I added the first 7 ingredients in the slow cooker, plus the seasonings and cooked on high for about 4 hours, or until the potatoes were done enough to mash some of it.
After mashing the potatoes a bit, I added the cream and the slurry, let it come back up to temp and added the cheese.
Husband said it was very good. I tasted it, but wasn't hungry enough to eat.

Edit 2: added the onion I forgot.

Diced ham
Swiss cheese
Onions celery
Home fries frozen just dump them in and or dice up potatoes.
