What's for Dinner, Sun., Feb. 6, 2022



I grew this pumpkin, among many others, but this one lasted until now, so I decided to roast it. The recipe I'm using is made for cooking pumpkin soup from raw pumpkin, not canned. The name is "Creamy Roasted Pumpkin Soup." It has onion, garlic, cinnamon, nutmeg, cloves, cayenne, and cream or coconut milk. Also maple syrup. It's supposed to be topped with pepitas; I fortunately have a few bags in the freezer.

That and toasted nine-grain bread with olive oil butter will make a light meal for me tonight.

For dessert, some milk chocolate and decaf vanilla nut.

I also made 3 ingredient peanut butter cookies (1 cup PB, 1 cup sugar, 1 egg) and added chocolate chips for the husband.

Didn't get much at the store yesterday. Got lost on a trip and was confused and tired.

National super chain raised price on donuts again. They wee 70 for awhile, then 75 last month, now 85.

But on the bright side, I was in the store late yesterday, rare for me and on a Saturday, and the stale donuts are piling up. The baker was boxing all the old ones despite boxes of old ones still on the shelf. I watch an economist on Youtube who keeps saying consumers will resist. It's time to resist. Retailers are testing the market. Once supply stops moving they will know we're going elsewhere if we can.

It is another work night for TJ

Fresh ground chuck with baby Swiss cheese on slider potato rolls
Mustard potato salad from the grocery
Perhaps a small bowl of bean soup
Earl Grey tea

FLFC usually gives his burger 3 or 4 paws up - I just started frying them. Will the aroma wake him?

EDIT: FLFC arrived underfoot as I was removing the burgers from the pan. I has slipped his two day old leftover half burger in the pan and served that to him. He ate like a dog

7. Pork chops

Broiled thick-cut pork chops.
Yellow rice and peas.
Dark chocolate and red wine for dessert.

Your pumpkin looks awesome. Last Fall, the Landlady(!) wanted to make a pumpkin pie and she found this video on YouTube for pumpion pie. Max Miller, the cook & host, points out that what we call pumpkin pie is really a custard. Anyway, she made it and it was unique and delicious.

using Rancho Gordo's Domingo Roja beans, since it is Sunday. The beans were cooked with the leftover bone from a pork shoulder, then baked with molasses, mustard, and vinegar for a few hours. Delish! With a salad made with the Swiss chard and beet top thinnings from the garden - which was not as successful.
