What's for Dinner, Wed., Mar. 2, 2022

Posting early because I'll be gone until early evening, taking care of tech and phone stuff with my friend, plus going to an early dinner at SGD Dubu, a Korean restaurant chain with locations all over the U.S.

My plan is to order the beef bulgogi Korean Bento box.

I first became aware of this restaurant when I was in Chicago a few years ago and liked them so much I had dinner there several times during the week. I was really happy to find they had a location near me in NJ.

One reason I might not have the Bento Box, though, is that they have some kind of heavy plate that holds the heat exceptionally well. You don't get that with the Bento Box.

I mean literally, you can sit there at your table for 2 hours and this (stone?) plate will still be hot. The other reason is that with some of the other entrees you get all these small dishes of salads and vegetables. They have quite the assortment of pickled radishes.

Injera is a sour fermented flatbread with a slightly spongy texture, traditionally made of teff flour. In Ethiopia, Eritrea, and some parts of Sudan, injera is the staple; also eaten in other countries in East Africa, injera is central to the dining process, like bread or rice elsewhere. Wikipedia

The main dish was beef suqaar, which was a surprisingly mild beef stew. The meet was cubed into quarter inch pieces.

The bean stew, I think is his mothers creation, flat mild beans in a slightly thick stew, I could taste onions in a not very liquidly sauce one of the injera was the right compliment to it.

I’m trying to get more vegetables in my diet. It was rather more textured than I like—maybe I need a better blender.

Grecian chicken:
boneless chicken breast cut into strips, marinated with oregeno, garlic, lemon, and olive oil. Marinated for several hours and then grilled on a counter-top grill, Hamilton Beach purchased at Target. I bought my first one around 25 years ago, maybe 30. It's wonderfully reliable. A year or so ago the first one simply died and to my astonishment and delight Target had the exact same make and model available for purchase. Wow. I thought I was going to have to get used to something different.

The rice pilaf is Rice-a-Roni. The veggies are: a carrot, cut into thin angled slices, zucchini cut into chunks, a red pepper sliced, and sweet onion. I really love the onion. What I cut up will be good for several meals, and I saute my single portion at each meal.

The roll is a Pillsbury refrigerator roll. Package of 5. What I don't eat in the next day or three will be frozen.

My house is wonderfully fragrant right now from the chicken.

I live alone and try to plan my meals with an eye on leftovers. I'll have this same meal tomorrow night, will then freeze the leftover chicken. On Friday I plan to buy a catfish filet at the supermarket, which will then make two meals, also using the rice and veggies. I'll do a blackened catfish.

Down the road I'll reheat the chicken, do another round of rice pilaf and veggies. By planning ahead with the leftovers, many of my meals cost $3.00 or less. I've become very disciplined about eating the leftovers, which helps my food budget.

Oh, and some red wine, a pinot noir with dinner. I'm a red wine gal, but your favorite white wine would also be good here.

soon and will check that grill out.

Meal sounds delicious; grilled chicken puts off such a wonderful aroma, even outside on the grill.

It's possible your local Target store won't have it. As I recall, I needed to order it online and it was mailed to me.

It's been a very long time since I've had access to an outdoor grill, and this one is perfect for me. I don't use it too much. The main other thing I use it for is for Teriyaki pork chop, which for me is a boneless pork chop that I've marinated overnight in Teryaki sauce. It's another thing that freezes very well after being cooked.

Tonight's meal took about 45 minutes to fix. Tomorrow night it will be about five minutes, the time it takes to saute the veggies and reheat the chicken, rice, and roll.

The aroma of certain foods always hooks me. What I love about fixing Thanksgiving dinner is how my home smells wonderfully for several days after. When I was married, I'd every so often decide I didn't want to cook and my wonderful, even if now my ex, husband, was always willing to book a reservation somewhere. While it was so nice not to have to cook and clean up, I always missed the leftovers and of course the aroma of Thanksgiving in my home.
