Summer's coming: Super easy, SO good pineapple/yogurt popsicles

I used unsweetened Greek yogurt and precut pineapple chunks from the store. I had much more than would fit in my popsicle molds, so put the rest in a freezer safe plastic container, to be eaten like sherbet with a spoon. I'm a popsicle freak, folks, and I can't wait to make these with other fruits.

INGREDIANTS

3 cups cubed fresh pineapple
3 cups vanilla or plain yogurt can sub plant-based yogurt
1-2 tablespoon of pineapple juice leftover from the cutting board or from the container if bought pre-cut from supermarket
*option to add a squirt of lime juice if you'd like some extra tang.

INSTRUCTIONS

In a food processor or blender, give the pineapples a few quick pulses.
Add the yogurt and pules a few more times, making sure you leave small chunks of pineapple.
Pour the mixture into the popsicle molds.
Allow to set in freezer for at least 12-24 hours.

and haven't since reading this article in 2012. They've only gotten worse since for their workers, their independent sellers and their customers.

I just remembered that I already have the sticks, so am going to get some generic paper cups that aren't made by Dixie, which is owned by Georgia Pacific, a Koch subsidiary.

Miss him so much! But I used to check with him first before I would buy grapes.

Good for you, hippywife. I'm pretty much housebound, and Amazon has been a lifeline for me, but I totally understand.

We practically are for all intents and purposes. I can't risk even a minor case of COVID, so we run into town only once a week for grocery pick up and errands, and don't go in anywhere we don't absolutely have to, and never anywhere unmasked.
