What's for Dinner, Sat., Mar. 5, 2022

Butternut squash ravioli with baby portobellos, garlic, shallots, parsley, and sage. Topped with Parmesan cheese, pepper, and more parsley.

Apple cider turmeric kombucha.

Brie and honeycrisp apple slices for dessert.

Decaf coffee.

They’re really thick so we’re going to season them with a dry rub then slow bake them.

Creamed spinach and shoestring French fries on the side.

Fresh berries for dessert.

Fried sweet potato, carrot, green beans, broccoli, salad with urugula.

Have successfully reduced donut consumption by 50%, and survived a can of Chef-Boy-R-Dee lasagna this week. Did you know the chef received "both the Gold Star order of excellence from the US War Dept. & the Order of Lenin from Russia for supplying rations to allied troops during WWII"?

I don't eat cake or cookies. So donuts is all there is. And, this week, I bought a dozen, but when I got them home, there were only 11 in the package. I've noticed this a couple times. They break up 2 of them to look like 3 if you only look quick. I guess this is inflation of sorts.

any donuts but gluten-free and buy them frozen in the supermarket.

Al is picking up some sandwiches from the shop downtown.

There's no dessert, unless I get the Millionaire shortbread done before I got to bed. I'm making it for my granddaughter's birthday party which is tomorrow. Al's picking up the corn syrup I need for the caramel, so I can't go any further until he gets back.

Hubs was able to walk across the room without the walker and now has feelings in his lower legs and feet and the terrible pain is gone. For those who don't know, he broke his foot from a fall but had been having issues with pain in his legs and feet and numbness...the podiatrist noted the nerve issues and sent him to a neurologist he had a spinal fusion with rods as his spine was too thin (probably congenital as he is very tall). He had surgery in the same area a couple of years ago, but the surgeon missed quite a bit...so feeling grateful that every day he is a bit better. He spent two weeks in the hospital before and after surgery.

surgery. We should have had a second opinion. But we were told the healing could take up to three years which is not really true... The results were immediate this time...there was pain from the incision but the terrible back pain and leg pain...numbness was gone.

from a local rancher. We made burgers on a bed of lettuce with big fat tomato slices, fried onions and shiitake mushrooms. So good!

14. Roasted a chicken

with veggies in the pan: red potatoes, carrots, lots of onion chunks, Brussel sprouts, mushrooms and some elephant garlic cloves. The veggies caramelized beautifully and were really good. I've finally settled on a roasted chicken recipe that is easy and consistently quite good.

the sauce was leftover from some Chinese delivery earlier this week. And kimchi pancakes, a Korean dish I don't do too badly if I do say so myself.
