Haven't made one in a few years, but this is the recipe I've always used.

As usual, wasn't prepared enough to have my milk and eggs room temp. I didn't want to drag out my hand mixer, so just used a whisk. I don't have the arm strength anymore to do that for five minutes, so I went as long as I could, and kept coming back to it every so often between doing other things, and whisking it some more. Yet, given all that, it still rose about 3 inches above the pan side.
Served with cinnamon and nutmeg applesauce. Was saving the other half for tomorrow, but husband went back for seconds. Have to go see how much damage he did.
Used the recipe for the medium size in 10' cast iron skiller, used 4T. instead of 5T of butter.

my sister just sent a pic of one that a houseguest made for their breakfast. it was in a glass deep dish pie plate...I always thought this was a cast iron only thing?
husband loves, he used to order them at Village Inn (I think? it has been ages) they called them German Apple Pancakes and were really for two people.

(22,767 posts)you can make them in other types of pans, but I don't think you get them as crispy on the bottom unless you use cast iron.

(110,913 posts)that fit into an old Waring blender. Just 10 seconds in that thing did the trick.
I always put the hot apple filling on one side and flipped the other one over it, sieved a little powdered sugar on top. That made it fancee enough to serve as dessert at a dinner party. Because the apple filling would eventually make it soggy, it had to be eaten at one time. There was never a problem with that. Other than the filling, it was mostly air.
