What's for Dinner, Sun., Mar. 6, 2022

Pizza with arugula on top.

Years ago I had this at a restaurant. It was just fabulous, so I'm going to have it tonight with the arugula over a pepperoni pizza.

The one at the restaurant was a wood-fired pizza oven, though, so I am wondering how much difference that will make.

A tossed salad with avocado, shrimp, red onion, and cucumber.

Dessert: hot chocolate made with oat milk and chocolate chip bits. Shortbread cookies with mascarpone.

1. Solo dining tonight

I'm going to start with a spinach salad with thin slices of strawberries and slivers of almonds topped with a raspberry vinaigrette.

Fo an entree, I'm going to take a boneless chicken breast, season it with Cajun spices then "grill" it on the griddle. Meanwhile, Im going to fry some onions and garlic to put the the chicken. All of this gets served on top of an English muffin. I'll probably make a little rice as well.

Mint/chocolate chip gelato for dessert.

Italian wedding soup, but I messed up. I looked all over the fridge for the ground beef I had taken down to thaw and couldn't find it. After husband looked in the fridge, too, I asked him, "We didn't use any ground beef this week, did we?" He then reminded me that I had made meatballs to slice for the lasagna. My mind just totally skipped from taking it down for that and thought I'd taken it down for this.

So we're having brie tart with dates, cranberries, pears and onions caramelized in butter on puff pastry instead. Will finish the soup tomorrow when the ground beef is thawed.

This isn't expensive at all to make and feeds us for two meals.
