I picked up a few of these beauties today. I'm going to coat them with flour, breadcrumbs and spicy seasonings then sautée them with some white wine.

Caesar salad, garlic bread and linguini with tomato & basil sauce to round it out.

Backgammon and Sambuca afterwards.

pounded out some boneless/skinless thighs and stuffed them w/ ham and Swiss. Breaded and baked (on a rack).

mushroom rice pilaf

sauteed yellow squash




I didn't make dessert, but I did make a blueberry quick bread this morning. I guess if we want something sweet we can cut into that.

Orzo with asparagus and parm. Roasted garlic and kale Caesar salad with bacon. No dessert for me…going to Hawaii in 3 short weeks.

I made some sauce, added some chicken chunks, layered ravioli with the sauce, some Provolone and topped with Parmesan, baked it for 20 minutes. Quite a break from my low-carb choices. Had frozen blueberries with topping for dessert.
