This time I subbed my homemade plain Greek yogurt for half the milk. Even tho I made large, normal-sized pancakes, thinking that would be it (because it usually is), husband decided they were so good, he needed a second one. Guess that's going to be a permanent modification to the recipe going forward.

Personal notes:
I've tried the suggestion for a larger ratio of buckwheat to AP flour, it's not at all tasty. The ratio in the recipe is perfect as it is, with a nice, hearty flavor. YMMV.
Re: milk, I don't keep buttermilk in the house because I can't use it fast enough, and I have no fridge or freezer space for it. I normally use regular whole milk and they're absolutely fine without it. I don't measure out the entire amount in the recipe, because I've never needed the full amount. I add from the carton, gauge exactly how much I need by the batter's consistency as I mix, adding more if/when needed.
Butter: I do not, as the recipe instructs, stir the melted butter into the dry ingredients. Even though everything in me said it was an odd instruction, I still did it the first time, and it was not fun trying to get it well mixed in or to get the liquid ingredients mixed in afterwards. I add it, if using (see below), with the milk and eggs.
I also use this recipe for waffles, using the butter for those to add to the crispiness, but personally find it an unnecessary (and expensive) addition for pancakes, so only use oil when making those.
I always add a 1/2 or so teaspoon of vanilla.

(22,767 posts)in various recipes and have had this in the back of my mind for a while but just hadn't done it. Not sure why since I always have fresh homemade yogurt because husband eats it with fruit every morning long before breakfast so I end up making a large batch every week.
