Sichuan-Style Eggplant with Scallions



Has ginger, Chinese black vinegar (love this stuff), chili-bean paste. An entire bunch of scallions. Served over brown rice.

This recipe is from Christopher Kimball's Milk Street Vegetables, as is the picture above.

Dessert: Strawberries and whipped cream.

2. Corned beef in the crock pot

with potatoes, carrots, onions, and cabbage.

Not ready yet.

Smells great.

FLFC had beef from leftover stew as well as treats in bed for dessert. He got outside for a while this afternoon and was sniffing the breeze eagerly, but mostly stayed in one spot. His favorite neighbor came out and rubbed his ears as is expected.

5. Baked salmon with a honey mustard and onion glaze

Half a baked potato, steamed broccoli and cauliflower.

Twas good.

Chocolate frosted brownie and ice cold milk for dessert sometime later.

6. cheeseburgers

with the usual fixings

And a cup of homemade soup. Sis gave me the broth from her pot roast (and a little meat), so I put it to good use w/ some carrots, celery, onions, diced tomato and macaroni.

7. Panko-crusted fresh flounder filet made in a cast-iron skillet

with steamed broccoli (with lemon-pepper-butter).
