Rick Bayless: Mole Negro (video)



I so want to make this because mole negro is like the holy grail of moles but I've always felt so intimidated when I read recipes for it. He breaks it down so it's not a one-day, 16 hour process, but it's still time intensive over a couple days.

I worry that I have a plebian blender and it might not be able to handle that part of it and I sure don't look forward to cleaning my stove after I'm done, but I'm going to try to make this over the weekend. (He did mole coloradito last week, too, in case anyone is interested.)

Sometimes I make curry meals that take a 5 or 6 hours, but this is truly a labor of love. I wish you good luck. Looks delicious!
