homemade pancakes for din tonight.

from the lookout cook book 1938
page 21griddle cakes .

1 coupp flour
1 teaspoon baking powder
3/4 cup milk ( i use silk milk)
1 egg , well beaten, poor egg, what did it ever do?.
1 1 1/2 melted butter or shortening.
cook on fry pan , skillet untill ready to serve .
makes 12.
i made a big boo bo. memo to self. make small cakes . not a large one . easier to flip, enjoy

Looks good, but how much butter is that?
I found a good recipe for waffles at Martha Stewart's website.

I stumbled on this some years ago: At a 2:1 ratio mix cream of tartar and baking soda to make baking powder. It doesn't have that bitter taste that the commercial ones do. I use 1/4 Cup of tartar (a jar of tartar is 1/4 cup) to 2 TBSP of baking soda to make a batch. Sift it thru a FINE strainer three times. If it clumps at a later date, then just sift again and good to go. Enjoy your flapjacks!

ingredients. Tastes great.

Also I use olive oil instead of butter or fat, healthier.
