Potato leek soup for an appetizer.
Salmon with brown sugar glaze.
Broccoli florets with garlic and olive oil.
Dessert: Spicy Good Earth tea and five-seed almond bar (TJ's) with whipped cream. Also strawberries with a little agave over them, a dollop of tapioca pudding over the top.

I make mine with garlic, EVOO, and lemon!

(35,428 posts)When the RG does it, he just puts brown sugar in the bottom of a pan and sears the salmon filets. Then he puts the filets in an oven dish and bakes it until done. It's really good this way but it does require a bit of skill. You have to be fast.
When I do it, I make the glaze ahead of time by melting about 3 T of brown sugar, 1 T soy, 1 T of Dijon, and 1 t of rice wine vinegar. I stir this up in a saucepan while my salmon is in the oven at about 350. When it gets close to done, I put the glaze over the salmon and turn the heat up to 425 for about 5-10", until it gets that nice-looking glaze finish.

It's supposed to be chicken piccata. Not sure what else. Probably should have saved some of the asparagus for tonight, but didn't think about it.
Scratch that. Tonight ended up being bacon and swiss on rye with halved grape tomatoes on the side for him, nothing for me. Neither of us were really up for much. It's hard to cook when you have no appetite and even less energy.

(42,676 posts)I don't there is time for dessert tonight. There's no donuts anyway. I think soon I'll be double batching pancakes for breakfast and saving one til dinner. As long as I can get whole wheat flour.

Dessert is yellow cupcakes with strawberries and whipped cream.

Keeping it easy tonight as I've been running around taking care of Sis and Dad. Sis has the flu (she tested negative for COVID), and so with her out of commission, I had to cook for Dad today (he had a pizza--mushroom and onions).
I had to run to the store for Sis, pick up some meds and a few other items for her household that she couldn't go and get.
This evening, I'm getting the sniffles, chills and body aches. I hope if they need me tomorrow I can be available. Otherwise, I don't know what we'll all do.

(10,073 posts)made with half of the leftover mussels from last night, and leftover pizza sauce thinned with the stock from the mussels. That's the problem with Costco: the prices are usually very good, but unless you're feeding a large number of people you have to get creative with the leftovers.
