What's for Dinner, Wed., Mar. 30, 2022

My friend is just back from a 5-day trip to Cape Cod, so I'm making dinner for us tonight. It's been a bit cold here, so I made white chili with cannellinis and am using turkey and shredded pepperjack for the topping.

Of course, gotta' have cornbread to go with chili, so I'm whipping that up now. Green chiles in that, too.

The salad is already made: tossed green leaf with iceberg, artichokes, red and yellow pepper, red cabbage for accent, Persian cucumber, and red onion. Radish, too.

I'm having Pineapple Peach kombucha and she'll have white wine.

Dessert: chocolate chip cookies and decaf coffee and tea.

Raita with cucumber, mustard seeds, and cumin. Spinach and potato pea samosas and papadums.
That white chili, cornbread, and salad sound yummy on a day with this somewhat raw weather!

I really wanted something comforting tonight. I probably should have been resting instead of spending an hour on dinner prep, but... I wanted something comforting. I usually serve meatloaf w/ mashed potatoes and gravy, but the scalloped potatoes should be pretty saucy, so I don't think we'll need gravy.

I haven't been cooking for Dad because we don't want him to get sick. Al dropped off some microwave meals for him yesterday. I hope Dad's okay with that. He has been getting confused a lot lately.

Cod was boiled with basil and apple cider vinegar
Gingerbread cookies for dessert
No donuts this week either. I didn't go to that super. They raised prices so much and the employees are so terse. I hope to avoid them for awhile.

4. I made tuna noodle casserole

Used whole wheat pasta, some frozen mixed vegs, can of mushroom soup, can of tuna, chopped onion. I wanted it fast, so I heated the the veggies tuna and soup while the pasta was cooking. Topped it with f.f. onions and shredded cheddar. Really salty. I'm not used to processed food anymore.

My friend called and we talked an hour. My daughter will be calling, but at least I got a hot meal.

White beans with the last of the curly mustard from the garden, with a Portuguese linguica thrown in for good measure. Cooked in the InstantPot, whose main virtue as far as I'm concerned is that I didn't have to start prepping the beans 2 days ago.
