Light ( kind of) healthy summer dip when you don't feel like cooking

• Cucumber Dip Recipe:
8 oz light cream cheese
8 oz light sour cream
2 T chopped onion
2 t celery salt
1 t vinegar
1 and 1/2 cup chopped cucumber. Remove the seeds

Mix together...serve with your choice of any crackers, celery, carrots



Then tonight, I got a wild hair and rolled some in a tortilla and cut into appetizer size pieces. SO very good

--and asked me to come up with more recipes using it. This is a sample of stuff I got on line that I will be trying.

reen Goddess Dip and Dressing
Ingredients

1 cup chopped avocado (about 1 avocado)
3 or 4 anchovy fillets, mashed or 1-1/2 to 2 teaspoons anchovy paste
2 garlic cloves, minced
2 scallions, chopped
1/4 cup fresh basil, chopped
1 tablespoons chopped fresh parsley
1 tablespoon minced fresh tarragon leaves
1/4 cup Greek yogurt
1/4 cup white wine vinegar
1-1/2 tablespoons lemon juice
Extra-virgin olive oil (for making dressing)

Directions

1.Combine the avocado, anchovies, garlic, scallions, basil, parsley, and tarragon in a food processor.
2.Add the Greek yogurt, white wine vinegar, and lemon juice. Process until smooth. Serve with crudités as a dip or over steamed green vegetables.
3.For dressing, add olive oil 1/4 cup at a time, processing constantly until the desired consistency is reached. Toss with salad greens.
Makes 1-1/2 cups.

Spicy yogurt dressing
1/2 cup plain yogurt
1/4 cup chili sauce
1 tsp prepared horseradish
1 tsp steak sauce
1/2 tsp worcestershire sauce
1/8 tsp garlic powder



German yogurt salad dressing
1/2 cup plain yogurt
2 tsps artificial sweetener (sugar, taste)
1 tbsp canola oil (walnut)
2 tsps balsamic vinegar (white, white wine)
1 tbsp chives (chopped) 1 tbsp minced onion 1 tbsp dill (chopped)
1 tsp minced garlic
1 tsp mustard (optional)

1 Mix the yogurt, sugar, vinegar and oil together.
2 Add mustard (the mustard taste comes through a lot, so only use if you are in the mood) if you like.
3 Stir in the onions, chives, dill and garlic.
4 Let it sit for a few minutes up to a few hours in the refrigerator for the flavors to marry.
5 Serve or use cold.


Garlic yogurt salad dressing.
Garlic, lemon, and salt turn plain yogurt into a simple and delicious salad dressing. Try it on heartier salad greens, like romaine, on chopped vegetable salads, or as a dip.
Prep Time: 5 minutes
Total Time: 5 minutesYield: About 1/2 cup
Ingredients:
•1/2 cup plain yogurt
•1 to 2 tsp. lemon juice
•1 to 2 cloves garlic, minced
•Salt to taste
•Freshly ground black pepper to taste (optional)
Preparation:
Combine yogurt, lemon juice, and garlic in a small bowl and whisk together, or put them in a jar and shake to combine. Add salt to taste. Add pepper, in you like.

Makes 1/2 cup Garlic Yogurt Salad Dressing.


Dill yogurt salad dressing
1/2 cup unflavored yogurt
1 tablespoon freshly squeezed lemon juice
1 teaspoon fresh parsley, minced
1 teaspoon dill weed
1/4 teaspoon garlic powder
pinch of salt (to taste)
Miracle Whip or Mayonnaise, to taste

Whisk together ingredients in a bowl. Refrigerate or use immediately. For an extra lemony kick, add a pinch of True Lemon.


VINAIGRETTE DRESSING

Makes 1/2 cup. Serves 8; 1 tablespoon per serving.

2 tbsp. plain nonfat yogurt
2 tbsp. balsamic vinegar
4 tbsp. acceptable vegetable oil
1/4 tsp. salt
1/8 tsp. freshly ground black pepper

Combine all ingredients in a small bowl and whisk until thoroughly blended. Cover and refrigerate.
For each variation below, add the listed ingredients to the above recipe.
