Related: About this forumC&B Challenge: foods for pre-diabetic, picky, vegan eaters on game night...
We are having a two additional people over for game night (haven't done this since pre pandemic).
I don't want to do a full meal but want stuff that's substantial enough to handle beer that may be consumed. Two people are vegan, one is pre-diabetic and picky (hates vegetables), the other is just picky. I can serve a mix of things, not just vegan. And they aren't being picky towards me, but I would like to have things they want to eat.
Hummus and veggies are easy. Black bean dip/salsa/tortillas could work.
I could do turkey meatballs and vegan meatballs and lean Greek with the sides. Maybe wraps?
Any suggestions? I want stuff they can grab and eat while playing.
Thank you!

(16,334 posts)I think the dolmas would be a hit with everyone (maybe not the super picky) but I know the vegans love those when they can get them.
Thank you!

(15,090 posts)This is a regular item at our house. I usually serve it in rice, but its also a tasty snack..
Press a block of firm tofu between paper towels to dry it. Then cut it into half-inch cubes. Marinate the cubes in:
1/4 cup Hoisin sauce
2 tablespoons soy sauce
1 teaspoon sugar
1 teaspoon grated ginger
2 cloves garlic, minced
A pinch of red pepper flakes if you like it spicy
Heat a large cast-iron skillet smoking hot, splash in a bit of neutral oil, and dump in the tofu. After the cubes are well seared, give them a gentle stir, repeat until nicely browned all around. When theyre done, you can sprinkle the lot with sesame oil or sliced green onions, but its not necessary.
