(2,674 posts)My favorite carrot recipe calls for dry mincemeat ( crumbled), but adds so much flavor. I have to order the dry mincemeat on-line, stores don't carry it anymore.

You can leave out the nuts.
Id also reduce the sugar a bit.
Probably keep the crushed pineapple in.

(2,674 posts)Makes a lighter cake, not so dense and just leave out the nuts. Bake in sheet cake pan, frost with cream cheese frosting. I just bought a bag of carrots and I have a can of crushed pineapple in my pantry that's been hanging around too long. I have to run errands today, but pineapple carrot cake tomorrow- yum,yum.

Pretty simple, calls for crushed pineapple and baby food carrots. Plus cream cheese icing if you want.
