What's for Dinner, Tues., April 12, 2022

Stuffed red peppers and Poblanos. I'm going to make up a couple different types of stuffings:

--one will be Halloumi cheese and couscous, along with vegetables like chopped zucchini and herbs. Chili powder.

--another type will be Gardein crumbled plant food substitute for ground beef and chopped vegetables.

--a third will be mozzarella-filled red bell peppers with chopped basil leaves over the top.

On all of the above, I'll use my Eric Ripart herb/spice combos.

I have a tossed salad ready: red tip green lettuce, iceburg for crispness, and carrots, peppers, tomatoes, celery, and cucumbers. Homemade Thousand Island dressing. Chow mein noodles over the top.

For dessert, a milkshake made with marshmallow chocolate ice cream.

1. Burgers

No buns in the house. I had mine on WW toast with A1 sauce, lettuce, and bread and butter pickles.
Mac and cheese

FLFC didn't even get up for the smell of cooking burgers. He had eaten a lot earlier. Salisbury steak, Temptations, and fake bacon Beggin Strips. He ignored those strips for a month, but once again they are good.

We ate outside, it was pretty windy but the food was outstanding.

and I see Guy Fiero's been there, too.

The menus look like good idea starters for what to have for dinner on nights where you just don't know what to fix.

Guess I'll have some grilled cheese with it, and maybe a salad. I drink iced tea with lemon and just a tad of sugar, year 'round.

I didn't stay to eat with him tonight, although I'm sure I would have thoroughly enjoyed it. I made him a Ruben sandwich w/ a mound of french fries.

But, I need to cook in my own home sometimes too!

Tonight Al & I will have sauteed boneless/skinless chicken thighs in mushroom sauce, confetti rice and buttered beets.

We still have lemon bars if we feel like having dessert.
