What's for Dinner, Thurs., May 26, 2022

Stuffed red and green peppers. The stuffing is turkey sausage, chopped vegetables like carrot, onion, and celery plus whole cannellinis. Lots of herbs mixed in and melted cheese with crispy bacon bits on top.

Cucumbers in sesame-rice wine vinegar-ginger dressing, along with chopped scallions.

Dessert: strawberry mango shake.

I had yet another EGD yesterday. This doc puts me under general, does a slow dilation, and injects the constricted area with steroids. I have a sore throat from the ET tube, so I feel chicken soup-ish, and the congee is guaranteed Vietnamese penicillin! I make it in the IP. So good!

Hamburger patties, sliced carrots, diced onion, mushrooms, corn, and sliced potato. I cook the hamburger patties then place all the ingredients in aluminium foil with a little bit of olive oil, then seal packets and grill on low heat for approximately 15 to 20 minutes each side. I like mine with a little steak sauce.

appetizer of Cesar salad


I cooked for Dad tonight and ate with him since Al is in the hospital. I spoke w/ Al just a while ago. He's doing well (the pain meds are working) and he had a nice dinner. He should be home in 2 or 3 days.

Dad and Sis leaving for Maine tomorrow to go fishing with one of the other sisters. They'll be gone for a few days as well. Thank goodness for the fur-babies. I'd be lonely without them.

I may walk to the corner store for a candy bar later, if I decide I want something sweet.
