What's for Dinner, Sun., May 29, 2022

Corn chowder with bacon bits. Mollie Katzen recipe. Also has red pepper, a little cubed potato, basil, thyme.

Gingerberry kombucha.

Dessert: Two toasted blueberry waffles with tapioca. Cherries over the top with toasted almonds.
This is so easy and delicious. Cold decaf vanilla nut coffee.

4. Pre-planned dinner

Roasted chicken marinated in lemon juice, garlic, olive oil, white pepper and soy. Basted with honey last 30 minutes of roasting. Red beans and rice, some broccoli florets. Everything is cooked, just need to reheat. Oatmeal chocolate chip cookies for dessert.

8. A surprise!

We're going to our neighbor's house for dinner. She and her late husband are Latvian and they came to the U.S. many years ago. Nadia is a spectacular chef so I know we're in for a multi-course culinary treat.

Igor was a golfing buddy and a very wise man. We all miss him terribly. We've spent some very special times with Nadia since he passed. It's an absolutely beautiful day in the Catskills and it'll be a lovely evening.

I'll post back later with her menu.
