What's for Dinner, Mon., May 30, 2022

Is everybody grilling today?

I would but I haven't cleaned up my grill, so I guess I'll just have a mango shrimp salad.

Tomorrow will be my big day because the RG returns from being away on business for a few months. We are going to our favorite Portuguese restaurant after he lands.

Yay, lots of fun, good meals, dining out and enjoying each other's company. Plus some household repairs, heh, don't forget about that. Just for 10 days, though, because he still has contracts to finish that were put on hold during Covid.

Note: for newcomers to the thread, the RG stands for the Resident Gourmand. He cooks most of the meals around here when he's home, but travels internationally, so gone sometimes. He works in the gourmet food field.

It's a stunningly beautiful day here in the Catskills. Sunny, warm and blue skies. Perfect for Memorial Day.

The Landlady(!) wants to go traditional so I'm going to grill hot dogs, cheeseburgers and corn-on-the-cob. She's making cole slaw and potato salad.

By the way, I teasingly call Courtney the Landlady(!) because when we first connected about 8 years ago as a couple (we've been friends for 40 years!) she had a large apartment and the country house and I paid her rent every month. She also owned a house in the OBX that she rented as a side business. She sold that property when we boat the sailboat. Now that I've invested in and improved both the apartment and the house, we've changed our household economics but I still like to tease her!

Enjoy, and tell us about the Portuguese restaurant, please. I visited one a few months ago, heard about from A. Zimmern, I think, O Dinis in East Providence, where I bought a bottle of an old favorite of mine, and gave it to daughter and son in law for their anniversary: Mateus Rosé Original

4. Indoor Kitchen-Cooking On Memorial Day

Twice-cooked pork roast; first cut into large pieces then into the pressure-cooker (sans spices). When done, then slathered with Sweet Baby Ray's Original sauce and finished in a hot oven till the sauce is just right.

Sides of freshly-made potato salad, and roasted zucchini bits (prepped with sautéed olive oil and rosemary twigs which MUST be made first and only then added to the zucchini pieces), plus cornbread hot from the oven with bowls of mildly heated barbeque sauce for dipping.

Tonight’s menu is T-bone steaks with onions and mushrooms, sweet corn and Merlot. M&M ice cream for dessert. Also, my friend found two morels in her yard and gave them to me. I’m sautéing them with my mushrooms.

Husband had the last two falafel with tahini sauce and tabbouleh. I just put some tabbouleh in a small wheat tortilla wrap with some tahini sauce. It was really good.

Then I had some angel food cake with vanilla ice cream, strawberries and whipped cream. Husband had an ice cream sandwich an hour or so before dinner, but I'm sure he'll still have something for dessert later.

The sweet smoked variety.

And it was food fit for the gods.
