What's for Dinner, Thurs., June 2, 2022

Shrimp in garlic-butter-olive oil. Also flounder francese.

I had the most beautiful, fresh eggplant, so I made stuffing with it--two kinds, to put in puffed pastry.

One filling is blue cheese, toasted walnuts, chopped eggplant, garlic. The other is toasted almonds, eggplant, onion, garlic, and cheddar. In addition to puffed pastry, I stuffed two red peppers with this mixture and put a butter panko crumb layer on top.

Tossed green salad with the usual cucumber, tomatoes, etc.

I was going to make corn off the cob, but I think this will be enough.

Dessert will be blueberries and tapioca pudding.

It could be leftovers from last night (chicken parm w/ spaghetti), or hot dogs, or grilled ham and cheese. I'll decide when I get hungry.

I did get some brownie mix today... maybe I'll get up and make them, maybe I won't.

Made Dad a burger and fries. He was in a very confused state when I got there. He had mixed up what day of the week it was, thought he was going to Saturday afternoon mass, when he found that he wasn't he started making dinner. Glad I got there when I did. Most days he would probably be okay, but it was obvious that he was just really confused today.

The grocery had a good price on a family pack. There are two smaller and one larger. We'll have the two smaller tonight and split the large one tomorrow. Have had them dry brining in the fridge since we got home.

Serving with baked sweet potatoes with crumbled bleu cheese and steamed asparagus with fresh lemon.

I used sauce from a jar, but added fresh onions and frozen mixed vegs. I cut up a potato into very small dice, and fried in olive oil, s&p and then sprinkled dried chopped onions over them-adds flavor and crunch. Had some radishes as an appetizer.
