What's for Dinner, Sat., June 11, 2022

Appetizer: clamato juice with lemon juice and black pepper. Stalk of celery from garden with which to stir.

Eggplant/walnut filling in puffed pastry with garlic pesto.

Shrimp Linguine with Herbs, Corn and Arugula

Pomegranate kombucha.

Dessert: mascarpone tiramisu. Cold decaf coffee.

My nephew and his fiancee are getting married and it’s a big bash. I’ve never been to Minneapolis before. It’s a lovely city.

I haven’t been told what the menu is going to be. Meanwhile, a glass of Pinot Noir.

I don't know what's for dessert. Sweet potato I think.

Meanwhile my radishes won't radish, no bulbs, 3rd year in a row, in spite of fertilizer.
Oregano a bumper crop.
Chives poor condition, those 2 broiling early days really set them back a YEAR.
Blueberry bush, last remaining one of six, potted and growing but will be a long recovery. In 30 years they made 11 blueberries. Not eleven pints. Eleven.

That's porcupine meatballs, for the uninitiates, made in the instant pot. This iteration made with ground pork and jarred carnitas sauce.

Tortilla chips

Fruit salad with mango, pineapple, strawberries, fresh cherries, lime juice, and tajín,

When I eat walnuts, because they interfere with uptake of my thyroid meds.

Breakfast was the usual smoked sausage, an egg with a bit of spinach and vegan cheese, and salad. Weird, I know, but that’s what I like for breakfast.

Our dinner tonight? Heb Bruschetta burgers, which we always eat as not a burger, and a sauteed squash, tomato and onion side.

And that’s it. I eat a big breakfast, and that tends to fill up my tank for the rest of the day. I’ll eat a lighter second meal more to keep my blood sugar from freaking out than out of hunger. Third meals don’t happen often this time of year. A light snack between breakfast and dinner, at most. It’s just too hot to eat much without getting nauseous.

In winter, I eat a third meal more often.
