The last few times I baked bread in a loaf pan, there were some soggy spots on the bottom crust. Annoying, but since I toast the bread I use, no biggie. A few years ago, my daughter got me a French bread baking rack, with a perforated bottom. I thought I'd use it this time. I made bread dough with an egg in it, and got 2 loaves, just right for this rack. The bread turned out amazing, and I can hardly leave it alone!
I am inspired to experiment with my bread-baking. Any ideas?

(17,622 posts)..round loaves with hard crust and soft centers...we had to quit making it because its so simple and so yummy and we all gained weight.

(16,974 posts)I stopped buying store bread, in Oct. 20. I thought if I made my own, I could control the ingredients, and size of the slices. It has worked well, but these loaves are really good.
I've been successful getting to my goals, but this bread has been a temptress

I make artisan bread occasionally for my guys. I love the cranberry-walnut version.

(16,974 posts)they've come out tasty, and very low-carb. I discovered monk fruit sweetener for baking, no aftertaste like stevia. I've made cranberry-walnut bread and blueberry zucchini bread.

(16,974 posts)They bake about a loaf a week. I don't have a cover pan I can use. I tried it in a spring form with a pizza tray on top, but probably not airtight

(58 posts)Have you tried Jim Lahey's recipe for no knead bread. A very simple process that turns out a great rustic loaf.

I tried it, but I don't have the right pan for it. My birthday is coming up. Maybe someone will get me a Dutch oven

(16,974 posts)I switched over to Visions years ago, but I worry about using that with the higher heat for the no knead. I have a metal dutch oven, but it is pretty big. I'd like to get a smaller one. I don't have many metal pans without handles.

Try making pizza dough for your own homemade pizza. So easy, so good. So inexpensive

(16,974 posts)I've made pita bread, English muffins, Belgiam waffles, bagels, and pizza dough. I make dinner rolls for holidays, always requested. i made Ciabatta bread, but not for a long time. You are right. It is so yummy! I don't have a pizza stone.
I have been on a low carb diet the last few years, but I found an almond flour/mozzarella cheese pastry dough that makes a terrific pizza crust. And I have that once in awhile.
