We are grateful for leftovers, too. Although I did make a double batch of hummus (nice and cool) to add an extra night snack.

I make croquettes (fried patties) with the canned stuff and take out the bones and skin.

Looks like everyone's in the mood for salmon!
In addition, I made one of my favorite recipes: Mollie Katzen's cauliflower-cheese pie. This time I innovated a little and added parsnip to the potato crust.

Because the cauliflower was so big, I used half of it to make a cold curried cauliflower soup.

Also made a mesclun salad and baked potatoes.

I wasn't really all that ambitious: I did a lot of the prep last night.

One more thing: I cut up a watermelon, so lots of cold, juicy slices to munch on throughout the late evening.

We won't be dining until around 9:30, but all the work is done!

Now out to the garden, to get a few things done while the sun isn't beating down. I'm planting more heirloom tomatoes tonight, while I planted heirloom beans and Persian cucumbers earlier this a.m.

11. I'm doing chicken and mushrooms over freekeh

I'm cooking chicken thighs with green garlic, mushrooms and lemons and will serve it over the freekeh dotted with some green peas for color.

I'm doing a simple green salad with baby lettuce, cucumber, tomato and maybe an avocado if it's ripe

I have cheesecake left over for dessert and of course lots of cherries for snacking later.

12. Pasta salad with kale pesto.

Kale pesto makes a great dressing for pasta salad. I recommend using rotini as the pasta.

This is the first time I made pesto with kale. It's really good, but not as good as basil pesto. Nothing can beat basil pesto. I think the kale pesto would make a nice spread for a sandwich wrap.
